1–3 cloves Garlic
1–4 Fresh chili peppers
1 tbsp Roasted peanuts

1 tsp Palm sugar
1 tbsp Soy sauce or mushroom soy sauce (instead of fish sauce)
1–2 tbsp Tamarind juice
1–2 tbsp Lime juice
Optional Additions:
1 tsp Fermented soybean paste (tao-jiew) for extra umami
1 tsp Coconut sugar (instead of palm sugar, if preferred)
Step-by-Step Instructions
Pound the aromatics: Place the garlic and chili peppers in a mortar and pound them lightly with a pestle to release their oils and spice.
Make the dressing: Add the palm sugar, soy sauce (or mushroom soy sauce), tamarind juice, and lime juice to the mortar. Mix well until the sugar is dissolved.
Toss the vegetables: Add the grated green papaya, sliced tomato, and long green beans. Gently pound and use a spoon to toss everything together until the ingredients are well combined and have absorbed the dressing.
