The Base:

  • 200 g Oyster mushroom stems (or whole mushrooms, torn into strips)

  • 1/2 cup Crispy frying flour

  • 1/4 cup Cold water or soda water (the secret for extra crunch!)

  • 1 tbsp Rice flour (to help maintain crunch)

Seasoning Blend:

  • 1/2 tsp Salt

  • 1/2 tsp Sugar

  • 1/4 tsp Ground white pepper

  • Optional: 1 tsp Dried seaweed or chili powder for extra seasoning


Step-by-Step Instructions

  1. Prepare the mushrooms: Clean the oyster mushroom stems and pat them completely dry with a paper towel. Tip: Moisture is the enemy of crunch, so ensure they are dry!

  2. Make the batter: In a mixing bowl, combine the crispy frying flour, rice flour, salt, sugar, and white pepper. Gradually pour in the cold water (or soda water) and whisk until the batter is smooth but slightly thick.

  3. Coat: Dip the mushroom stems into the batter, ensuring each one is evenly coated.

  4. Fry: Heat vegetable oil in a deep pan over medium-high heat. Carefully drop the coated mushrooms into the oil. Fry until they turn a beautiful golden brown and sound "crispy" when tapped with a spatula.

  5. Drain & Season: Remove from the oil and drain on a wire rack or paper towel. While still hot, sprinkle with your choice of seasoning (such as chili powder or seaweed flakes) to let the flavors stick to the surface.

  6. Serve: Serve hot as a snack or alongside a sweet chili dipping sauce!
