Golden crispy deep-fried Thai bananas with coconut and sesame

Deep-Fried Bananas (Gluay Tod) are a beloved Thai snack found at almost every street corner in Thailand. Imagine perfectly ripe bananas coated in a crispy, golden, coconut-scented batter—it is the ultimate comfort snack that is sweet, crunchy, and absolutely addictive!

Making these at home is easier than you think. The secret lies in the batter, which incorporates coconut shreds and white sesame seeds to provide that signature aroma and extra crunch.

Ingredients

The Fruit:

  • 6-8 Ripe bananas (Nam Wa variety is best – firm but ripe)

  • Vegetable oil for deep frying

The Crispy Batter:

  • 1 cup Rice flour

  • 1/4 cup All-purpose flour

  • 1/2 cup Shredded coconut (fresh or desiccated)

  • 1 tbsp White sesame seeds

  • 1 tbsp Palm sugar

  • 1/2 tsp Salt

  • 1/4 cup Lime water (limewater helps keep the batter crispy for longer!)

  • 1/2 cup Coconut milk or cold water

Step-by-Step Instructions

  1. Prepare the bananas: Peel the bananas and slice them vertically into 3-4 flat pieces each. Set aside.

  2. Make the batter: In a large bowl, whisk together the rice flour, all-purpose flour, palm sugar, and salt. Gradually stir in the coconut milk (or cold water) and lime water until you get a thick, smooth consistency.

  3. Add the aromatics: Stir in the shredded coconut and white sesame seeds. These ingredients are essential for the authentic Thai flavor and texture.

  4. Fry: Heat vegetable oil in a wok or deep pan over medium-high heat. Dip each banana slice into the batter, ensuring it's well-coated, then carefully slide it into the hot oil.

  5. Cook to golden: Fry for about 3-4 minutes, turning occasionally, until the batter is golden brown and crispy on all sides.

  6. Drain: Remove from the oil and drain on a wire rack or paper towel to keep the exterior crispy. Serve hot!
