Looking for a quick, healthy, and incredibly flavorful meal? This Spicy Isan-Style Rice Bowl is a modern, vegetarian twist on the traditional Thai Larb. It combines the punchy, acidic, and spicy notes of Northeastern Thai cuisine with wholesome ingredients, making it the perfect nutrient-packed lunch or dinner.
By using sautéed mushrooms or plant-based protein instead of meat, we keep the dish light yet deeply satisfying. Let’s get cooking!
Ingredients (Serves 1)
The Base:
1 cup Cooked Jasmine rice (or Brown rice for extra fiber)
100 g Mixed mushrooms (e.g., Shiitake, Oyster, or Shimeji), finely chopped
The Flavor-Packed Dressing:
1 tbsp Lime juice
1 tbsp Light soy sauce (or vegan fish sauce)
1/2 tsp Palm sugar
1-2 tsp Dried chili flakes (adjust to your heat level)
1 tbsp Khao Khua (Roasted Rice Powder) – The essential Isan aromatic!
Fresh Aromatics & Toppings:
1 tbsp Shallots, thinly sliced
1 tbsp Spring onion, chopped
A handful of Fresh mint leaves
Optional: Cucumber slices, baby corn, or steamed broccoli for extra color
Step-by-Step Instructions
Sauté the mushrooms: Heat a small amount of oil in a pan over medium heat. Sauté the chopped mushrooms until they are browned and tender. (If using plant-based mince, cook according to package instructions).
Season: Add the light soy sauce, palm sugar, and chili flakes to the pan. Toss briefly to combine and remove from heat.
Finish with herbs: While the mixture is still warm, stir in the Khao Khua (roasted rice powder)—this provides that signature nutty aroma! Add the shallots, spring onions, and fresh mint leaves. Gently toss to mix.
Assemble the bowl: Scoop the hot rice into your favorite bowl. Top with your spicy Isan mushroom mixture.
Serve: Garnish with fresh cucumber slices or steamed vegetables on the side. Enjoy while the herbs are fresh and fragrant!
