30 g Shallots
30 g Garlic

Step-by-Step Instructions
Roast the ingredients: Place the long green chilies, shallots, and garlic on a grill or a hot pan over medium heat. Roast them until the skins are charred and blackened, and the inside becomes soft and tender.
Peel the skins: Once roasted, peel the charred skin off the chilies, shallots, and garlic. Pro tip: The char adds the essential smoky aroma, but remove any burnt bits that are too bitter.
Pound the aromatics: Add the peeled garlic and shallots into a mortar and pound them until they become smooth.
