Khao Moo Daeng (Thai Red Pork Rice) is a classic Thai street food staple. It features succulent, tender slices of marinated pork served over warm jasmine rice, topped with a rich, sweet, and savory gravy. The final touch of sliced cucumber, cilantro, and a hard-boiled egg makes it a perfectly balanced meal.

Ingredients
The Pork:
300 g Pork loin or pork shoulder
1 tbsp Red curry paste (for color and spice base)
1 tbsp Oyster sauce
1 tbsp Soy sauce
1 tbsp Sugar
The Signature Sauce (Gravy):
500 ml Pork stock (or water)
2 tbsp Roasted peanuts (ground)
1 tbsp Sesame oil
2 tbsp Oyster sauce
1 tbsp Soy sauce
2 tbsp Palm sugar
1 tbsp Tapioca flour (mixed with 2 tbsp water for thickening)
Side Items:
Steamed jasmine rice, boiled eggs (halved), sliced cucumbers, and fresh cilantro.
Step-by-Step Instructions
Marinate the pork: Combine the pork with red curry paste, oyster sauce, soy sauce, and sugar. Marinate for at least 30 minutes.
Cook the pork: Roast or bake the pork at 180°C until fully cooked and tender. Once done, let it rest, then slice it into thin, beautiful pieces.
Prepare the sauce: In a pot, bring the pork stock to a boil. Add the oyster sauce, soy sauce, palm sugar, and sesame oil. Stir in the ground roasted peanuts.
Thicken: Slowly pour the tapioca flour slurry into the boiling sauce while stirring continuously until it reaches a smooth, glossy, and thick consistency.
Assemble: Place a serving of rice in a bowl. Arrange the sliced red pork and half of a boiled egg on top.
Finish: Generously ladle the hot gravy over the pork and rice. Garnish with cucumber slices and fresh cilantro. Serve immediately!
