Authentic Stir-Fried Morning Glory (Pad Pak Boong Fai Daeng)

When it comes to Thai street food, Pad Pak Boong Fai Daeng (Stir-Fried Morning Glory) is an absolute legend. It is the ultimate quick and flavorful Thai street food vegetable dish that you will find at almost every night market and local restaurant.
The secret to this dish is extremely high heat and speed. The hollow stems of the morning glory (water spinach) perfectly absorb the savory sauce, which is rich with fermented soybean paste and garlic. Let's fire up the wok and make this iconic side dish!
Ingredients (Serves 2)
The Main Vegetable:
300 g morning glory (water spinach), cut into 2-inch pieces
3 cloves garlic, minced
2-3 red chili peppers, sliced
2 tbsp vegetable oil
The Savory Sauce Mix:
2 tbsp oyster sauce
1 tbsp soy sauce
1/2 tsp fish sauce
1 tsp sugar
1 tbsp fermented soy bean paste (tao jiew)
1/4 cup water or light stock
Step-by-Step Instructions
Prepare the vegetables: Rinse the morning glory thoroughly. Cut into 2-inch sections and discard very tough stems.
Make the sauce: In a small bowl, mix together: Oyster sauce, Soy sauce, Fish sauce, Sugar, and Fermented soy bean paste. Stir until combined. Set aside.
Stir-fry aromatics: Heat the vegetable oil in a wok over medium-high heat. Add minced garlic and sliced chili. Stir-fry for 20-30 seconds until fragrant but not burnt.
Cook the morning glory: Add the morning glory to the wok. Stir-fry quickly and continuously for 1-2 minutes until wilted and bright green.
Add sauce & liquid: Pour the mixed sauce over the morning glory. Toss to coat evenly. Add the water or stock and stir-fry for another 1 minute, or until the vegetables are crisp-tender and the sauce slightly thickens.
Serve: Remove from heat and transfer to a plate. Serve immediately with steamed rice.
