Authentic Glass Noodle Salad Recipe (Yum Woon Sen)

Yum Woon Sen (Glass Noodle Salad) is one of Thailand’s most beloved salads. It is light, vibrant, and packed with a perfect balance of spicy, sour, and savory flavors. What makes it so special is the texture of the glass noodles, which soak up all the tangy lime dressing and spicy aromatics.
Whether you are looking for a protein-packed meal with minced meat and shrimp or a clean, plant-based vegan version, this recipe is incredibly versatile and easy to make at home.
Ingredients (Serves 1)
The Base:
40 g Glass noodles (soaked until soft)
30 g Minced chicken or pork
2-3 Prawns (shelled and deveined)
10 g Wood ear mushrooms (sliced)
10 g Onion (sliced)
1-2 stalks Chinese celery (chopped)
1-4 fresh Chili peppers (crushed)
For Vegan/Vegetarian Version:
Replace meat and prawns with 30-40 g of firm tofu or assorted mushrooms (e.g., Shimeji or Shiitake).
Replace fish sauce with light soy sauce or vegan seasoning sauce.
The Dressing:
1 tbsp Lime juice
1 tbsp Fish sauce (or light soy sauce for vegan)
1 tsp Sugar
Step-by-Step Instructions
Blanch the protein and noodles: Boil a pot of water. Blanch the prawns, minced meat (or tofu/mushrooms), and wood ear mushrooms until fully cooked. Remove and set aside.
Cook the noodles: Using the same boiling water, blanch the soaked glass noodles for about 1 minute until clear and soft. Drain well.
Mix the dressing: In a large mixing bowl, combine the lime juice, fish sauce (or soy sauce), sugar, and crushed chili peppers. Stir until the sugar dissolves completely.
Assemble the salad: Add the cooked glass noodles, blanched meat/tofu, wood ear mushrooms, and onion to the bowl with the dressing.
Toss and serve: Mix everything thoroughly until the noodles are well-coated with the dressing. Add the chopped Chinese celery and toss gently.
Finish: Serve immediately while fresh and vibrant!
