Authentic Crispy Spring Rolls Recipe (Chicken & Vegan Options)

Spring Rolls are a staple in Thai cuisine and a favorite for parties and snack time. There is nothing quite like biting into a golden, crispy wrapper to find a warm, savory, and perfectly seasoned filling inside.
Whether you prefer the classic version packed with minced meat and glass noodles, or a light and crunchy vegetable-based vegan version, this recipe is designed to help you achieve the perfect crunch every single time!
Ingredients
The Wrappers:
10-15 Spring roll wrappers (available in most Asian markets)
1 Egg (beaten, to seal the edges – use a mix of flour and water for Vegan)
The Filling:
Base: 50 g Glass noodles (soaked and chopped)
Vegetables: 1/2 cup Shredded carrots, 1/2 cup Shredded cabbage, 1/4 cup Wood ear mushrooms (chopped)
Protein:
Regular Version: 100 g Minced chicken or pork.
Vegan Version: 100 g Firm tofu (mashed) or finely chopped Shiitake mushrooms.
Aromatics: 1 tbsp Chopped garlic, 1 tbsp Chopped coriander root.
Seasoning:
1 tbsp Oyster sauce (or Mushroom sauce for Vegan)
1 tbsp Soy sauce
1/2 tsp Sugar
1/4 tsp Ground white pepper
Step-by-Step Instructions
Sauté the Filling: Heat a little oil in a pan. Sauté the garlic and coriander root until fragrant. Add the protein (meat or tofu/mushrooms) and cook until browned.
Add Vegetables & Seasoning: Add the carrots, cabbage, mushrooms, and glass noodles. Season with oyster sauce, soy sauce, sugar, and white pepper. Stir-fry for 2-3 minutes until soft. Remove from heat and let it cool completely before wrapping (this prevents the wrapper from getting soggy!).
Wrap: Place a wrapper on a flat surface. Add 1-2 tbsp of filling near one corner. Fold the corner over, tuck in the sides, and roll tightly. Seal the final edge with the beaten egg (or flour/water paste).
Fry: Heat vegetable oil in a deep pan to medium-high heat. Fry the spring rolls until they are golden brown and perfectly crispy (usually 3-5 minutes).
Serve: Drain the excess oil on a rack or paper towel. Serve hot with a side of Thai sweet chili sauce!
