Thai Style Sweet & Sour Stir-Fried Chicken is a colorful, tangy, and sweet dish that perfectly balances crispy textures with a rich, flavorful sauce. Ingredients (Serves 2-3)
Chicken & Frying:
1 chicken breast (250 g), sliced bite-size
1/2 cup crispy frying flour
1 tsp fish sauce
1/2 tsp seasoning powder
1 tsp sugar
Palm oil for deep frying
1/2 cup cashew nuts
Vegetables & Stir-frying:
1/2 onion, diced
1/2 red bell pepper, diced
1/2 yellow bell pepper, diced
1 tomato, diced
1/2 cucumber, diced
1/2 cup pineapple chunks
2 spring onions, cut into 3 cm pieces
1 tbsp garlic, minced
1 tbsp soybean oil
Sauce & Thickening:
3 tbsp ketchup
1 tbsp fish sauce
1 tbsp oyster sauce
1 tbsp sugar
Pinch of salt
1 tbsp tapioca starch mixed with 2 tbsp cold water
Step-by-Step Instructions
Fry Cashew Nuts: Heat palm oil in a wok over medium heat. Fry the cashew nuts until golden brown. Remove and set aside.
Prepare the Chicken: Season sliced chicken with fish sauce, seasoning powder, and sugar. Mix well until the sugar dissolves. Coat the chicken with crispy frying flour.
Fry the Chicken: Deep fry the chicken in hot oil until golden and crispy. Remove and drain on a paper towel.
Stir-Fry the Vegetables: Heat soybean oil in a wok. Add garlic and sauté until fragrant. Add onion and cook until slightly translucent. Add bell peppers, tomato, cucumber, and pineapple. Stir-fry for about 1-2 minutes.
Season the Sauce: Add ketchup, fish sauce, oyster sauce, sugar, and salt. Stir well.
Thicken the Sauce: Mix tapioca starch with cold water. Slowly pour into the wok while stirring until the sauce becomes glossy and slightly thick.
Final Step: Add the fried chicken, fried cashew nuts, and spring onions. Toss everything together and serve immediately.
