4-5 Shallots
6-8 cloves Thai garlic
1 tsp Galangal (sliced)

1½ tsp Kaffir lime zest
2 Coriander roots
1 tsp Shrimp paste
1½ tsp Salt
🍲 For the Massaman Beef Curry:
500 g Beef (shank or chuck)
400-500 ml Coconut milk
3-4 tbsp Massaman curry paste (from the recipe above)
2 Potatoes (cut into large chunks)
1 Onion (cut into wedges)
1½ cup Roasted peanuts
2-3 Bay leaves
1 Cinnamon stick
2 Star anise
2-3 tbsp Tamarind paste
2-3 tbsp Fish sauce
1-2 tbsp Palm sugar
1-2 cups Water
Step-by-Step Instructions
Part 1: Preparing the Curry Paste
Toast the dry spices: Lightly toast coriander, cumin, cardamom, cloves, cinnamon, star anise, and dried chilies over low heat until fragrant. Let them cool.
Pound the dry spices: Grind the toasted spices into a fine powder. This step is essential for a smooth paste.
Add fresh ingredients: Start pounding the harder ingredients first (lemongrass, galangal, coriander root), then add shallots and garlic.
Combine and finish: Add shrimp paste, salt, and kaffir lime zest. Pound until smooth, forming a reddish-brown paste.
Part 2: Cooking the Curry
Tenderize and cook the beef: Marinate the beef with pineapple juice for 20-30 minutes to help tenderize. Then simmer in water for 40-60 minutes (or use a pressure cooker) until tender.
Cook the curry paste: Heat a pan, add a little oil and some coconut milk. Add the Massaman curry paste and cook until fragrant.
Add beef and liquid: Add the cooked beef along with some of the broth, then pour in the remaining coconut milk.
Add spices: Add bay leaves, cinnamon, star anise, and peanuts.
Season: Add fish sauce, palm sugar, and tamarind paste. Taste and balance the flavors: it should be sweet, salty, and slightly sour.
Add potatoes and onion: Simmer for about 20 minutes until the potatoes are tender. Turn off the heat and serve.
👨🍳 Chef's Tips for the Perfect Massaman
Always work from hard to soft ingredients for a smoother paste texture.
A blender can be used, but the aroma will be less intense than hand-pounding.
You can store the paste in the fridge for up to 1 week or freeze it for up to 1 month.
Cook the curry paste until the oil separates ("cracks") for a deeper flavor.
Beef shank is ideal for a rich, tender texture. The curry tastes even better the next day after reheating!
